Produced at the new Cata Reserva estate in Pitalito, this Pink Bourbon undergoes an extensive process involving 72–84 hours of oxidation followed by a 36-hour anaerobic fermentation. This specialized natural method produces a remarkably creamy texture with notes of forest fruit gelato, vanilla yoghurt, and brown sugar.
