We have now worked with several harvests from David Berrio’s garden, La Casita, and his small-scale, intentional approach continues to inspire. This third and final harvest pass is the most expressive of his Chiroso lots this season. In the cup we find a tropical-forward profile with vibrant acidity and clarity.

Our approach to roast development ensures that the end product is nothing more—or less—than perfectly developed. Through continued analysis and the honing of roast profiles, we aim to deliver a crystal-clear expression of the inherent characteristics of each coffee at its absolute maximum potential.
